I think you could use any kind of pasta with this dish and it will be delicious. Chicken is such a family favourite but it helps to change it up as often as possible and this definitely will add some new flavours to the rotation.
Tuesday
4 Servings Start to Finish: 25 minutes
I would add some extra shrimp and toss in some corn at the end with this dish. It's not as thick as most bisques but that's mainly due to the quick cooking time. A great meal for a cold night with a light caesar salad.
Wednesday
Serves 4 Start to Finish: 30 minutes
All of the recipes I've chosen this week are under $4 per serving. The folks at IVillage.com created this dish and I think it's unique in it's flavours. It is packed with protein and very low in calories so if you want to treat yourself to some fresh Italian bread to accompany it, feel free. This dish is light tasting yet filling.
Thursday
4 Servings Start to Finish: 20 minutes
Salmon is so easy to cook and with these fresh herbs it's a lovely reminder that spring is around the corner. Serve with couscous or quinoa and some steamed asparagus. Lovely!
Friday
4 Servings Start to Finish: 30 minutes
Be careful not to cook these at too high heat or for too long otherwise they will dry out. Some avocado and tomato would be a delicious addition to this healthy dish. If you don't want the bun, serve it on a bed of spinach leaves.
