This Week's Menu


Monday       Lemony Chicken Saltimbocca
Serve this light and savory dish over a bed of angel hair pasta or polenta to catch all the sauce. Garnish with a lemon wedge to prepare diners for the citrusy flavor. A simple dish that looks so elegant people will think you slaved in the kitchen for hours.

Tangy and rich with sour cream and pungent with Dijon mustard, this elegant sauce is at home atop many shellfish beyond scallops: Try shrimp, lobster, even crawfish. Make the sauce and scallops at the same time, and the whole dish takes three minutes. Serve with a fresh green salad for the fastest company-worthy meal you'll ever make.

Thursday     Spicy Beef and Bell Pepper Stir-Fry

Friday      Grilled Portobello-Goat Cheese Pitas
Each element of this dish contributes unique elements. Crispy and chewy texture come from the grilled pita; tanginess and cooling creaminess from the goat cheese; sweet, juicy freshness from the tomato; and earthy smoky flavors and meaty texture from the portobellos. If the tomatoes are ripe, skip grilling them. Serve with a tropical fruit salad of mangoes, cantaloupe, and pineapple sprinkled with toasted coconut.
